NEW HOPE, PA — As the cherry blossoms prepare to bloom along the Delaware River, Stella of New Hope is marking the arrival of spring with a fresh infusion of flavor. On March 20, 2026, Bucks County’s premier waterfront dining destination will debut an all-new lineup of seasonal cocktails designed to capture the vibrant, transitionary spirit of the season.
Crafted by Beverage Manager Olivia Marinelli, the new additions prioritize fruit-forward profiles, aromatic spices, and house-made syrups, offering a playful twist on modern American mixology.
The New Spring Collection
Priced at $17 each, these new arrivals focus on bright acidity and complex herbal notes, perfect for sipping while overlooking the river.
- The Green Room: A sophisticated blend of gin and green apple–cardamom syrup, softened with egg white and finished with cardamom bitters and a honey drizzle. It is a botanical, garden-inspired take on a classic sour.
- A Samui Study: An adventurous, tropical-leaning creation featuring Thai tea, coconut rum, lime, and simple syrup. It offers a creamy yet refreshing profile reminiscent of a Southeast Asian escape.
- Raspberry Garden Fizz: A vibrant, effervescent cocktail made with tequila, raspberry syrup, lemon juice, egg white, and club soda. It’s the quintessential spring refresher—light, tart, and bubbly.
The Signature Staples
While the spring newcomers take center stage, Stella is keeping its beloved signature favorites on the menu. These “all-season” staples remain a draw for the local New Hope crowd:
- Stella Spritz ($17): A bold, spiced spritz featuring bourbon, cinnamon bark syrup, tart cherry, blood orange, and sparkling wine.
- Papier-Mâché ($17): A complex, bitter-forward drink for whiskey lovers, blending rye, Aperol, amaro, fernet, and grenadine.
- Orchid Beach ($17): A bright, floral option with grapefruit vodka, pamplemousse liqueur, and a rosemary & honey syrup.
Waterfront Atmosphere
Located at the Ghost Light Inn, Stella of New Hope is famous for its sweeping views of the Delaware River. The debut of the spring menu coincides with the reopening of the outdoor patio areas (weather permitting), allowing guests to pair their Green Room lattes or Raspberry Fizzes with the actual sights and sounds of the river coming back to life.
Whether you’re stopping in for a post-walk drink through the streets of New Hope or settling in for a full modern American dinner, the new beverage program ensures that your glass is just as vibrant as the view.
