Throughout the month, patrons can enjoy a selection of mouthwatering dishes that pay homage to the richness of Black history and culture. Chef Ron Hicks draws inspiration from his cherished childhood memories to create the Pan-Fried Salmon Cakes, a lunchtime delight that embodies his mother’s culinary prowess. This heartfelt tribute encapsulates the profound impact African American cuisine has had on the nation’s culinary landscape.

The menu features a delectable Milk Chocolate Parfait for dinner, artfully crafted to honor George Washington Carver’s groundbreaking legacy and his groundbreaking work with peanuts. The dessert is a testament to Carver’s ingenuity and the enduring influence he had on American gastronomy. The Southern Chicken Cassoulet also offers a captivating fusion of flavors, combining tender smoked chicken, black-eyed peas, and braised collards. This tempting dish showcases the chefs’ ingenious reinterpretation of a beloved French classic through the lens of Southern culinary traditions.

Highlighting its commitment to fostering community empowerment, Red Owl Tavern will donate a portion of the proceeds from the Black History Month menu to Farmer Jawn. This remarkable organization, founded by a Black woman, focuses on providing agricultural education and reintroducing farming to urban communities. By choosing to dine at Red Owl Tavern during February, patrons not only partake in a memorable culinary experience but also support the invaluable work of Farmer Jawn.

Executive Chef Charles Vogt expresses his excitement and pride in presenting these exceptional offerings to the restaurant’s discerning clientele. The Black History Month menu will be available as both à la carte and prix fixe options during lunch and dinner service. Lunch will be priced at $30 per person, and dinner is set at $40 per person, providing patrons an accessible opportunity to indulge in these exquisite culinary creations while contributing to a deserving cause.
